Research Interests

Functional Foods; Nutrients; 

My interest in food and nutrition originated from a biology lecture I attended in high school, where the lecturer shared a book called Life-Saving Diet with us. Before reading this book, my understanding of nutrition had always remained at the technical level of calculating calories and designing dietary formulas. But this book has enabled me to see a broader realm of this discipline related to social equity: when the poor are forced to consume cheap processed meat products while the elite pursue superfoods. It is also closely related to ecology as animal agriculture consumes a large amount of global resources, and a plant-dominated diet is the key to alleviating the ecological crisis. 

As people's demands for food continue to rise, delicious and healthy are both essential. I believe this is a market with great potential.
